‘Dine In’ Campaign on Dec. 3 to Improve Family Health and Finances
The evidence shows that preparing wholesome meals at home can have a significant impact on both family health and household budgets, and experts from the Rutgers Cooperative Extension have summed up the basics in two articles packed with tips and facts. The articles are available on the Union County website, ucnj.org/rce… The Rutgers Cooperative Extension of Union County is supported in part by the Freeholder Board. It belongs to the U.S. Department of Agriculture’s nationwide Extension program, aimed at providing the public with scientific research about community health and economics. Extension offices throughout the country are encouraging families to join the “Dine In” campaign on Dec. 3, as part of an annual celebration of the family and consumer sciences profession… People tend to eat healthier meals when they eat at home because they can better control portion sizes and the use of sauces, dressings, and other high-fat ingredients.

4-H Science Ambassador Program Helps Rahway Students Gain Knowledge Through Research
Children at the Rahway Public Library got a fun introduction to the principles of the scientific method this summer from a group of volunteer Union County 4-H Science Ambassadors. The projects included blowing bubbles and a simple “ski slope” demonstration… 4-H is a national youth development program. In Union County, 4-H is supported by the Freeholder Board, Rutgers University’s Cooperative Extension, and the U.S. Department of Agriculture… To prepare for their Rahway Library presentation in July, they attended the 4-H Summer Science Program at Rutgers University earlier in the month. They lived on campus at the School of Environmental and Biological Sciences during the one-week program, learning about scientific investigation as it relates to current issues and challenges.

Getting a Jump Start on Spring Gardening at Trailside Center in Mountainside
A group of 54 teachers and community volunteers braved the icy grip of winter to get a running start on the spring planting season, at last month’s “Get Your Youth and Community Garden Growing” conference. The event was conducted by experts from the Rutgers Cooperative Extension of Union County at the County’s Trailside Nature and Science Center in Mountainside… The free Gardening Helpline is a project of the Rutgers Master Gardeners of Union County, an all-volunteer group run by the Extension with the support of the Freeholder Board. The group is based at the Extension offices in the County’s Colleen Fraser Building in Westfield. Among their many civic projects, Master Gardeners cultivate the elaborate grounds of the Demonstration Garden and host the Spring Garden Fair.
