The Menus of Change University Research Collaborative (MCURC) hosted its fifth annual all-member meeting on October 7-9. The meeting took place at the University of Colorado Boulder and was co-presented by The Culinary Institute of America and Stanford University. Rutgers Nutritional Sciences majors Jessica Carr (SEBS’20) and Dana Ikeda (SEBS’20), IFNH Student Ambassadors, and Student Fellows of the MCURC, were invited to Colorado to speak at this informative conference.
MCURC includes universities across the country that adopt and research their Principles of Healthy, Sustainable Menus (Menus of Change Principles) in an effort to shift student food choices towards more plant-forward, health-conscious, and environmentally sustainable options. Rutgers University became a part of MCURC in September 2016, and has been implementing and researching the Menus of Change (MOC) principles since that time.
Through the IFNH Student Ambassador Program, Ikeda and Carr have participated in the design and execution of research, as well as dining hall special events that pertain to Menus of Change. At the conference, they participated in a 30-minute poster session, showcasing their research and projects posters. The SEBS students were also invited to give oral presentations in front of conference attendees about their events, past research, as well as exciting upcoming research they have planned around MOC principles. They are looking forward to continuing to work closely with the MCURC as Student Fellows through the IFNH in order to gather data on the best possible ways to educate college students on the MOC principles.
